Easy weeknight chili that is healthy enough for me to think I'm being healthy when I eat it. Lots of protein, lots of fiber, low to no saturated fat.
|96% Lean Ground Turkey||1lb|
|Kidney Beans||16 fl. oz. (1 can, drained)|
|Black Beans||16 fl. oz. (1 can, drained)|
|Diced tomatoes||8 fl. oz. (1 can Rotel/Hatch/Whatever, sometimes with peppers, NOT drained)|
|Vegetable Oil||1 Tbs|
|Chile Powder (note the "e" here, something like New Mexico Chile powder works well)||4 Tbs|
|Garlic Powder||1 Tbs|
|Onion Powder||1 Tbs|
- Heat vegetable oil in deepish pan and brown all the turkey. I say "deepish" because you're going to be throwing in a lot more than just 1 lb of turkey when all is said and done.
- Open all your sad canned food and drain the kidney and black beans
- Once turkey is browned lower the temperature of the pan and dump in all the other ingredients
- Stir pan until combined and allow to simmer for A While™
- Eat it good.
